Fifteen-minute white bean stew

Ingredients

  • 2 tbspOlive oilplus more to finish
  • 3 clovesGarlicsliced
  • 1 tspChili flakes
  • 2 tinsCannellini beansdrained
  • 250 mlStock
  • 1 bagSpinach
  • 1Lemon
  • to serveParmesan

Better the next day. Add the spinach fresh when you reheat.

Method

    Warm the garlic and chili in the oil until fragrant, not brown.

    Add beans and stock, mash about a third against the pan to thicken it.

    Simmer, then wilt the spinach through at the end.

    Finish with lemon, more olive oil, and plenty of parmesan.
